Let’s be clear: All pickles are not created equal. But keeping track of the various and sundry varieties out there can be confusing–the way pickles are cut, brined, soured, and stored all make a world of difference whether labeling something “kosher dill” or “bread and butter”.

Pickle 101

Bread and Butter
Bread and butters are the sweetest pickles.

Cornichons a.k.a. Gherkins a.k.a.
The little cute ones. Actually not a cucumber.

Kosher Dill
Made by combining only kosher salt, water, fresh dill, garlic and, of course, cucumbers.

Half Sours
Not as sour.

Full Sours
Fully sour.
