Think about Chawamushi

This is one of the dishes we are working on for Think II: a sustainable dinner that can last a life time. This is our 2nd dinner of mouth watering sustainable seasonal dishes. Think II is june 6th. And this dish is amazing. Only took 30 minutes to make it. And you should try it too.

Chawamushi is an egg custard dish found in Japan.

Mix three eggs together gently. Try not to beat too much air in to them.

2 cups of cooled dashi. Dashi is the corner stone to japanese cooking. Mix the eggs and the Dashi together.
Dashi is a class of soup and cooking stock in japan.

Steam the custard mix at a hard boil for 2 minutes then turn the fire down like your cooking rice. Steam at gently for 12-14 more minutes.

Prepare the toppings shrimp (steamed), baby lima beans, shiitakes, and scallions.

Place the toppings on top. Serve warm or cool it for 1 hour. Either way is tasty and great.
