Whats your favorite dish to make at home for the family?

By far, the best dish that I love to make for my family is my Chicken Ragu over my homemade orecchiette pasta. This dish is all about the fresh ingredients, simplicity, and slow cooking.

What do you drink (other then wine) when you cook?

My drink of choice when cooking, depends on the dish! But I have to say that my favorite recreational dish to make is my homemade IPA beer brats. When me and the crew watch our soccer matches. A nice DogFish 90 minute IPA does the job perfectly.

Whats your favorite protein?

Pork, Pork, and more Pork. Without a doubt, this is my favorite protein. It compliments every style of dish. From simple North Carolina BBQ, to intricate Korean dishes. It’s a staple protein world wide.

Fav movie?

One of the hardest questions ever! But have to say it’s Indiana Jones and the Raiders of the Lost Ark. I watch it at least once a month.

The name of your first Restaurant?

I love food. Who doesn’t? It’s the common bond for everyone on the planet. If you can cook a great dish, then you can have people, who would normally pass each other by on a daily basis, or even hate each other, sit down for at least a few minutes and enjoy each other’s need for food. So I would call my first restaurant “Diplomacy.” An international comfort food restaurant. It’s fitting for the Nation’s Capital.

When did you move away from the dc area?

Moved to DC when I was 17 from North Carolina. Worked in Georgetown at “Subway” on M street. Moved to Richmond when I was 20. Fell in love with tater tots and Atari. Moved back to DC when I was 30 and have worked three other jobs in Georgetown. Can’t seem to get away from this place.

Fav resturant in NC?

Parkers BBQ in Greenville NC. Been going there since I was born. NC vinegar BBQ, hushpuppies, brunswick stew. It’s what inspired me to cook. Simple and great.

Fav chef?

Wow. That’s hard. But have to say at the moment, it’s Roy Choi. The way that man blends Korean with Eastern is absolutely amazing.
